Sausage, Peppers, Kale, Tomato Skillet Meal

I had a package of sausage that was thawed so I went to the freezer, the fridge, the pantry and whipped up something so easy and so delicious I will be making it again very soon. You can serve it over pasta if you want, I did and it was really tasty. If you are watching your consumption of pasta or are sick of pasta, you can skip it. This one pot dish is fantastic on its own.

Sausage, Peppers, Kale and Tomato Skillet Meal

1 pound Italian sausage, sliced into 2 inch pieces
1 can of whole tomatoes
2 red peppers
2 cloves garlic
1 onion, diced into large pieces
5 stalks of kale
Olive Oil
Pinch Kosher salt
Generous pinch of pepper


In a large skillet saute the sausage over medium heat in a little olive oil until mostly cooked. Add peppers, onions, garlic and saute until soft. Add the tomatoes, salt, and pepper and cook until the tomatoes burst. Check sausage to see if it is done.

Thoroughly wash the kale, and slice the large stalk from the greens and discard. Tear up the remaining greens and add to the dish once sausage is cooked. Cook until the greens are just wilted about 2 or 3 minutes. Serve over pasta if desired.
