3 point Chocolate Cupcakes

It has been a while since I posted a good recipe. I also haven't done an update in a few weeks either. So I thought I would do both in this post. Today I am sharing a great 3 point recipe for chocolate cupcakes. I made these over memorial day weekend and they were delicious. I topped them with a little bit of whipped cream and wow, they were super good.

Chocolate cupcakes -Recipe adapted from Weight Watchers 

Preheat oven to 350 degrees and spray cupcake wrappers.Combine flour, sugars, cocoa, baking powder, baking soda, salt, and cinnamon in a large bowl. Stir to combine. Combine milk, eggs, melted butter, vanilla, in mixer. Whip on low. Slowly drizzle in coffee. Pour into prepared muffin tins. and bake for 17 min. Makes 2.5 dozen
I'm down a total of 8.1 pounds in just under a month. It might not seem like a lot to some, but I have had consistent weight loss all four weeks and am feeling great. I have more energy, a more balanced appetite, and have been able to identify several problem areas and work towards a solution. One thing I learned is that I am a big snacker. I would prefer to have smaller meals and snack in between. I'm working to change that. It has been a bit of a struggle, but it is all part of learning how to live a balanced life. 

I also started doing Leslie Sansone walking dvds. I had a few collecting dust that I bought for a few dollars off of amazon and decided to try them again. The amount of energy I have after is unbelievable. The walkers have very inspirational stories, and you can set your own intensity in the comfort of your own home. I'm not a big fan of going to the gym anymore, mostly because I'm not interested in getting gawked at. I want to get my exercise in and not have to worry about my appearance, or what's jiggling that isn't supposed to. If you are looking for a great work out these are fun.

Toddler True Story:

You know you are making positive strides when you pop in your exercise dvd and your son comes over and starts doing step aerobics! Granted it was only a few steps and more pointing and smiling, but it was adorable!
