Garden Veggie Kabobs

My garden this year has been terrible. I wanted an all organic garden and purchased organic seeds, dirt and lots of untreated lumber to build some garden beds. The weather and general life delayed my planting a little bit and so far I have two huge zucchini plants, a struggling cucumber bush, and several bean plants that have produced a whopping 3 beans.

This recipe features the zucchini and herbs that grows in my garden.  I paired it with a container of mixed cherry tomatoes that I picked up at the market. It's a really simple dish that comes together in minutes and is perfect for summer.

Garden veggie kabobs
2 or 3 medium zucchini, sliced into thick slices
1 pint of mixed mini tomatoes
1 drizzle of olive oil
1 stalk of fresh basil, torn

Thread veggies on skewers that have been soaked. Drizzle with olive oil and half of the basil. Grill until softened. Remove from grill and place on a serving platter sprinkle with remaining herbs and a sprinkle of Parm if desired. Other great additions are onions and mushrooms.
