Puff pastry with Strawberries and Creme Anglaise

If you have been reading my blog for a while, you know that I think that strawberries are divine. I had some puff pastry sitting in my freezer. I didn't know what to do with it and then it hit me, why not try a fun version of a strawberry shortcake? This is a very quick dessert that is beautiful, and it impressed my husband. It was so delicious that I didn't get a chance to take a picture! It was gone that quick! You can find the puff pastry in the freezer section. I don't know the first thing about making it but if you really want to I'm sure it would be even better! Creme anglaise is just a fancy name for vanilla custard sauce. It's a creamy, vanilla sauce that packs a lot of flavor in just a little drizzle. I used this recipe for my sauce, it's a little temperamental, but worth the effort for sure! I used vanilla sugar instead of the granulated for an extra vanilla kick.

Puff Pastry with Strawberries and Creme Anglaise- Makes 6

2lbs strawberries
1 box of puff pastry shells
1 1/2 cups of vanilla custard sauce

Prepare sauce, slice strawberries, and bake off shells. Then slice the pastry in half or pull it apart like I did. Place the bottom of the pastry on the plate and top with a little bit of the custard. Top the custard with a generous helping of strawberries and a drizzle of custard. Place the top on and garnish with a strawberry. Repeat with remaining shells. This dessert is best eaten immediately. I recommend keeping any extra sauce you have for drizzling. It's really good.

As for the WW points+ the shells are only 4 points and are great for chicken salad, so you might want to keep them around for when you are dying for a croissant and don't want to foot the points for one. The strawberries are zero points, and the sauce, is 18 points for the whole batch. If you eat 1/6 of it, that's only 3 points. That makes this dessert 7 points (4+0+3=7) and it tastes more like 20!
