Whole wheat Apple Spice Muffins

I started making these muffins when my toddler decided that he no longer wanted to eat breakfast. They instantly became a family favorite. I based my recipe off of a recipe found on I doubled the recipe and added lots of spices and reduced the amount of sugar. I love that they are whole wheat and are made in one bowl. They don't taste like wheat at all, so they are very easy to sneak past picky eaters. If you want to add more health to the muffin you can add shredded carrots or apples. I have been tossing around the idea of trying coconut oil, but haven't yet. Next time for sure!

Whole Wheat Apple Spice Muffins- Makes 2 dozen

1 cup canola oil
3/4 to 1 cup brown sugar
2 cups unsweetened apple sauce
2 teaspoons baking soda
3 cups white whole wheat flour
1 teaspoon cinnamon
3/4 teaspoon vanilla extract
1/4 teaspoon nutmeg
1/8 teaspoon ginger
1/8 teaspoon cloves
Dash of cardamom powder

Preheat oven to 375 degrees. Spray muffin tin or liners.

In a large bowl combine oil and sugar stirring well to combine. Add applesauce, spices, and baking soda mixing well. Finally, add whole wheat flour.

Pour batter into prepared tin, and bake 15- 20 minutes.
