It's been a while since I have done one of these posts so I thought I would share what we'll be having this week.
This Weeks Dinner:
Monday: I am really excited about this meal! I'm making a big salad with Spinach, Kale, and Strawberries. I'm serving it with grilled chicken and I think brown rice. I'm pairing it all with a homemade Berry Vinaigrette. My kids will eat the berries out of the salad and any sides.I'm hoping they try the salad & chicken. They're not very interested in a lot of meats or veggies. I'm working on it.
Tuesday: My husband has his first class on Tuesday so I am making him all his favorites for dinner. Hamburgers, Corn on the Cob, and a pasta salad. Easy and fun.
Wednesday: Take-out or Sandwiches. It's the beginning of the Little League World Series, and my boys wouldn't miss the parade for anything!
Thursday: Spaghetti, Salad, and Homemade Garlic Bread
Friday: Sweet & Sour Pork with Rice, a HelloFresh Recipe.
Saturday: Grilled Chicken, Microwave Roasted Potatoes, Fresh Veggies or Leftovers.
Sunday: More than likely we will have dinner at my Mom's and something small when we come home. We do a lot of visiting our relatives on Sundays and usually eat with them.
I've really been enjoying waffles & bagels topped with fruit or veggies & herbs. The boys have been eating a lot of cereal in the morning.
Typically we have either leftovers, sandwiches or salads. I like to keep the leftovers to a minimum and I also like to not have to make a big meal at lunch. We keep things as easy as possible.
